Chia seed mucilage (<em>Salvia hispanica</em> L.): An emerging biopolymer for industrial application

Biopolymers are widely distributed in nature and have a wide variety of biological properties applications. Chia (Salvia hispanica L.) is an herbaceous plant that belongs to the Lamiaceae family, which when contact with water exude fraction soluble fiber form mucilage. In view above, this study aims provide overview characteristics applications chia mucilage make it biopolymer industrial interest.
